Easy Greek Pork Tenderloin

- 1 kg pork tenderloin (about four) / 36 oz .
- 6 tablespoons Greek yogurt low fat (0%)
- 2 tablespoons lime juice
- 1 tablespoon garlic salt ground and
- 2 teaspoons coriander ground
- 1 teaspoon oregano
- 1 teaspoon black pepper ground
Steps
Pre-heat an oven 260oC / 500oF / Gas Mark 10.
Mix the yoghurt with the seasonings, spices and lime juice and thoroughly cover the tenderloin.
Place on a gridded baking tray in the oven for 10 minutes. Make sure you spread the tenderloins with room for air to circulate around them.
Turn the oven down (to 180oC / 350oF / Gas Mark 4) and continue roasting for 15 minutes.
Remove from oven and carve into slices. Rest for 5 minutes under a foil tent before serving.
