Greek Pork Tenderloin

High protein meals leave you feeling fuller longer on a DIET. This is tasty enough..

 4-serving
  1. 1 kg pork tenderloin (about four) / 36 oz .
  2. 6 tablespoons Greek yogurt low fat (0%)
  3. 2 tablespoons lime juice
  4. 1 tablespoon garlic salt ground and
  5. 2 teaspoons coriander ground
  6. 1 teaspoon oregano
  7. 1 teaspoon black pepper ground

Steps

  1. Pre-heat an oven 260oC / 500oF / Gas Mark 10.

  2. Mix the yoghurt with the seasonings, spices and lime juice and thoroughly cover the tenderloin.

  3. Place on a gridded baking tray in the oven for 10 minutes. Make sure you spread the tenderloins with room for air to circulate around them.

  4. Turn the oven down (to 180oC / 350oF / Gas Mark 4) and continue roasting for 15 minutes.

  5. Remove from oven and carve into slices. Rest for 5 minutes under a foil tent before serving.
